“Very dry with strong umami and acidity, distinctly lacking any kind of fruitiness. My first sniff made me think of proofing bread dough, and it's got a hint of banana on the tongue with a savory finish. This is very food dependent, I think; my first impression was a bit of a frown and eyebrow raise affair. Next bottle, I'll pair it with sushi or grilled markel — I suspect that will really help this one out.”
