“I gather this is aged for twenty years prior to bottling. My bottle has a date of July of this year. Crystal clear, light amber in color. The nose has caramel, wood, deep aged umami-sweet, like old British cheddar. You know, the good stuff you gotta buy at whole foods.
Flavor is bonkers, initial sip is "typical sake," rice and some white pepper but then immediately you're bombarded with rich acidity a la Madeira or oloroso sherry. Faint caramel, cocoa, and mushroom starts to push this into a whisky direction, the acidic tang and residual sweetness coexist wonderfully on the palate. This thing stood up to a hearty meal, and also drinks beautifully on its own.”
