While photos th at I take of these on the floor I my new bathroom look great, close up in real life, they’re not laid as tidy as they could be! This disappointment could be down to the fitter, or could be down to the fact they’re just very fiddly and tricky to work with.”

I'm sorry you were not satisfied.
These tiles can be difficult to work with as they are so small, so some level of skill is required.
However, from what you have described, it doesn't seem to be a manufacturing fault with the tiles, as they are made in sheets with even spaces between each tile.
For ease of fitting in future, maybe offer your tiler to use some Mosaic tile mesh to stick on the back of the mosaics.
Once laid onto the adhesive, the glue the tiles are attached to the mesh with dissolves, so the small tiles can be easily adjusted for your desired look, before they set.
