“These stoppers allow evacuation of the air space above the wine when you only want a small quantity at a time. The evacuating plunger, which is less susceptible to loss, is the other part of the unit. I find that even after four or five days a sensitive wine, like a pinot noir, tastes the same as when you first open the bottle. That is not true when you just put the cork stopper back in the bottle, which is what most restaurants do, Using that classical approach the wine develops distinctive objectionable tastes within two to three days.”
