I love my Berkel Home Line Plus 250! I have a small kitchen with insufficient space for one of Berkel's flywheel slicers, so I was looking for the next best thing. I checked in with the folks at Salumi Chicago, who recommended the Berkel Home Line. I chose the 250 over the 200 for its larger blade (250 mm vs. 195 mm) and greater cutting capacity for larger, denser food items. I couldn't be happier with my purchase. The Berkel Home Line Plus 250 effortlessly slices meats and cheeses to a wide range of thicknesses including paper thin. I haven't yet tested it with other foods. My first cutting project was slicing blocks of American Wagyu bresaola and Parmigiano Reggiano paper-thin for carpaccio di bresaola. The Home Line Plus 250 did this to perfection (see photo). I was astonished at how quickly and perfectly it sliced the food--I couldn't stop laughing! Cleaning is straight-forward although it took me a few evolutions to master blade removal and re-attachment. Prompt cleaning is essential to prevent accumulation of dried-on food residue and to keep things sanitary; I clean my slicer no later than the end of each day of use. Don't rush cleaning, especially when you are learning the cleaning procedure--plan on 15-20 minutes the first time, then 8-10 minutes after you have the hang of it. Thoroughly read the user manual ... twice! There is much valuable information you need to know to safely and effectively operate the slicer and keep it in good working condition. A couple of tips on things that aren't explicitly mentioned in the manual: 1) When positioning the Product Press Holder (#9 in the "General Plan of Machine" diagram), be sure that the holder is far enough back from the blade that the prongs will not contact the blade. I initially overlooked this and ended up slicing off the tips of the hard-plastic prongs, necessitating replacement of the holder and marring the finish of a small (1 cm) section of the edge of the blade. Huge thanks to Wine Enthusiast for coordinating with Berkel and sending me a replacement product holder ... for free! 2) Be sure to periodically clean and lubricate the screw on the product holder that attaches it to the Product Holder Knob (#14 in the diagram) as well as the receptacle in the knob. The screw/ receptacle seem to oxidize. I carefully use WD-40 to maintain the screw and the receptacle. The Berkel Home Line Plus 250 is a wonderful, high-performance kitchen tool. And like all high-performance tools and machines-everything from a Kramer carbon steel blade to a Porsche 911, it requires careful operation and maintenance. At just US$800, it's an incredible value that packs into a small footprint for home use everything the world's foremost manufacturer of food slicers has learned over the past 128 years. It's whisper quiet and a delight to use. Buy it and enjoy!
