I've now done the entire selection of Zhen knives and the steak knife set. They are all incredibly sharp and beautiful. This bread knife might be the sharpest knife I've ever used in the kitchen. It cuts through bread well, like butter. A few tips you might consider. 1. skip the rivets and go with mosaic pins. They are easier to do and far more attractive. I cut them slightly long with dremel /cutting disk and sand them flush while shaping the handle. 2. epoxy - I use a dark gray 6 minute as it tends to be less visible than clear. 3. a belt sander and some small drum sanders make life much easier. 4. If possible, let your customer judge what feels right... for truly custom fit. 5. Go with very hard wood. I used lignum vitae for all handles. No finishing needed if you sand it w 600 and it's almost indestructible. 6. tape the blade or there will be blood.

I bought the previously available 6-piece set similar to this about 5 years ago. I assembled them and have been using them ever since. They have been outstanding. The take an edge quite quickly using diamond hones. They hold the edge quite well, I typically resharpen every couple months, and I use these knives daily (personal, not professional use). Compared to the heavier German knives I was accustomed to (Wusthof) the balance of these is better, they are very responsive but stiff, and the thinner blades get through food easier. The corrosion resistance is excellent. They are an exceptional bargain as a set. I chose to assemble them using hidden or blind pins (you can look this up). The purpose of pins is to prevent shear forces from breaking loose the epoxy bond, which is what really holds the handle in place. The cutler’s rivets provided are a design idea that predates epoxy, there’s no need for them and they aren’t the easiest things to use. I used short pieces of bamboo skewer used for grilling, drilled shallow holes into the handle scales (less than 1/4â€
