The steel quality is good, but as another reviewer said, get them on sale. They are not worth $50. I've bought two sets now. One for me and another to sell or gift. I did mine in walnut and custom milled the pieces. The instructions said to cut the scales to 3/8". Don't do it! At 3/8" I was not able to get the pins to connect. I milled them to 5/16" to make it work without going to mosaic pins. I did mine the old school way with rasps and files. When I do the next set I will spring for a belt/strip sander because this is a lot of work to shape them. They are beautiful when finished. Good heft and sharp. A Man's steak knife. I suggest using True Oil for the finish. As another review also said: Tape them or there will be blood, and not from the steak.

I've now done the entire selection of Zhen knives and the steak knife set. They are all incredibly sharp and beautiful. The steak knives are great. They glide through any cut of meat no matter how rare or well done. A few tips you might consider. 1. skip the rivets and go with mosaic pins. They are easier to do and far more attractive. I cut them slightly long with dremel /cutting disk and sand them flush while shaping the handle. 2. epoxy - I use a dark gray 6 minute as it tends to be less visible than clear. 3. a belt sander and some small drum sanders make life much easier. 4. If possible, let your customer judge what feels right... for truly custom fit. 5. Go with very hard wood. I used lignum vitae for all handles. No finishing needed if you sand it w 600 and it's almost indestructible. 6. tape the blade or there will be blood.
