“I have used Fior di Latte before and found it excellent. I had previously been worried about the short 'use by' date, but learned that it freezes really well.
We had a big family pizza party. I ordered 2 kg of Fior di Latte so that we would have plenty for the pizza and plenty left over. I aim to use 80 - 100g of cheese per pizza, and then freeze the rest in 100g bags.
The cheese is superb. It seems to be creamier and less wet than supermarket Mozzarella. It gives a lovely creamy texture on the pizza withour making the pizza bottom soggy. Nobody wants a soggy botty. I now have over a kg in the freezer ready for the next pizza party.
I reccomend this unreservedly, my only advice being to order a lot, so that you reduce the postage costs, and then freeze whart you don't use.”
