“This chocolate has an incredibly intense flavor, slightly bitter, which I like. I also like the size of the callets, which are easily melted for the tempering process. The texture is not quite so creamy as some other brands (e.g. Guittard) so when I make chocolates, I blend at least 1 other brand of about 70% chocolate. The blend has lots of flavor and a great texture for me.”
