This chocolate is wonderful for melting. I use it often when making chocolate bark. The company gets an A+ for customer service. When their shipment of the size packaging I ordered was delayed they reached out and offered an immediate alternate at no extra cost.

I've been using the Callebaut W2 28% White Chocolate Callets for my mirror glazes and what a difference it's made! The flavor is so creamy and my glaze is delicious! They melt perfectly and help to make a nice, smooth glaze. So glad I'm using Callebaut!

Since Callebaut is the best that money can buy, I had high expectations when it came to flavor. Unfortunately, those expectations were not met. The flavor was lackluster and got lost when used in baked goods. The white chocolate also had an unpleasant aftertaste, almost like wax. So, my search for a good white chocolate continues.

I bought Callebaut because the description said milk from happy belgian cows that are outside. It is a great quality chocolate and my white chocolate mousse entremet with mirror glaze came out perfectly
