“I was hesitant to buy Valrhona and spend the extra $$, but decided to try it. I now see what all the fuss is about. The chocolate is much easier to work with than other couverature I've used. It seems to temper easier and be more forgiving of small tempering batches. It is thinner and much easier to dip and coat items like marshmallows and caramels.
I likely won't use it in my baking only because I can't really justify the spend, but for candies and coated items where the chocolate really stands out, I will definitely be splurging.”
