“I've tried many knife sharpening methods and systems. The Kadet PRO is THE BEST. Measuring the angle is important for good Japanese knives. Many tell you what the factory angle is. You can also measure the angle yourself with a lasar pointer reflecting on the edge. The flat part of the blade will give one reflective point and the edge will give another. The arctan of the distance between those points divided by the distance between the blade and the wall gives you the actual angle.”
