“I’m a huge fan of this sauce. The spiciness is high, but it has a very pleasant gradual buildup that plateaus and lingers at consistent level for a good while. IMO, it’s much more pleasant than the type of heat you get from Carolina Reapers, which I too often found more distracting to the dish than enjoyable. Whereas the Apollo’s heat profile makes this sauce phenomenal for spicing up just about any type of dish and far more easily compliments the other flavors. Underneath the heat is actually a delicious and surprisingly fruity flavor that I’d normally associate with bell peppers or some tree fruits. At first taste, it had me convinced that a tiny bit of fruit base had been added to the sauce, but this beauty is indeed 100% Apollo Pepper (not even salt was added). Overall, this sauce is easily one of my favorites. If this is just the first sample of the new pepper, than I’m crazy excited to see all the future sauces that take advantage of the Apollo.”
