“We had ordered this joint in advance for our meal at Easter. The provided instructions were clear, but we chose to divert to our own way - we quickly browned the bacon outside in an iron pan, then put the pan,(with the joint covered in foil) in an oven at the recommended temperature, until it reached 64C. Then, we uncovered it until it made 70C, took it out and wrapped in foil to rest. The pan scrapings were reduced with a glass of apple spirit and wine briefly, and put into a small dish to spoon over the top. Our portion (520g) (halved) was enough for two at lunch, sliced, dressed with the pan juices, a few minted peas and grilled courgette. Thanks S&K.”
