“I have cooked a goose for Christmas a few times in recent years and this one was definitely the best I have had. Absolutely delicious. I roasted it using the circulated air grilling function on my oven, which crisped up the skin beautifully ( 180 degrees, 30 mins/kg).
I was also pleased that the goose fat came in a pot and had no lumps.
It might be worth mentioning that the weight on the packaging is the gross weight including the giblets etc and the bird itself needs to be re-weighed before cooking.”
“The goose was absolutely beautiful, as has been all the meat I've ordered from Wild Meat Company over the years. The only problem is that they use DHL for delivery and in my area that company's service is appalling. Having had a consignment a few weeks previously from WMC which DHL screwed up completely (due on Thursday, arrived the following Monday, but full replacement/credit provided by WMC), I was apprehensive as to the delivery of the goose, and pleasantly surprised when DHL messaged me on the appointed day to say that it was on the way and I was stop 12, surprised to be informed later that it was still at the depot, and then to be told it was out for delivery and I was stop 2, then disappointed when they said it had been delayed. In the end it did arrive the following day, but DHL delete previous updates from their delivery log when they are inconvenient for them, so it's difficult to properly track what is going on. Wild Meat Company are great, their carrier is awful.”
