I and my husband were raised in New Mexico and moved to Stone Mountain, GA (Atlanta) in 1985. We have always kept our southwestern green chile roots and discovered Hatch green chiles after we moved away. I ordered 25 pounds this year, they arrived on a Friday (I brought them into the house and separated them as much as possible due to the heat and obvious humidity here in Geogia). On Saturday, I fired up my grill and roasted them. They are/were amazing!! I spit them up, froze most and my husband and I had chile rellanos that night and left overs for the next day. Then, I unfroze a pack and made more rellanos for my brother (also from NM) and his wife and they were blown away at how awesome they were. Granted, I'm a good NM cook but you can't get that flavor except from the best. I'm so anxious to share these chiles with my son, that was born in Georgia but is a true New Mexican at heart. He was eating chips with salsa at the age of 2 and on our first trip to Albuquegue with him at 5, he order jalapeno poppers and ate them all without flitching.
