The Evolution Yacht was beautiful and well-maintained. The staff worked hard behind the scenes and while passengers were on excursions-private rooms were well attended and the rest of the boat was pristine at all times. Stephen, our cruise director, was the happiest, kindest person I have ever met. He was always around to make sure we had anything and everything we needed and to share information about the islands as well as the mainland. His pride for his country was very evident and welcoming. The food was authentic Ecuadorian fare. Pepe always had at least 2 different main dishes offered at every meal. Savory pork, multiple types of fresh fish, tender beef and chicken were prepared in various interesting ways, but the real treat was the multiple tropical fruits and varied vegetable dishes that were served with every meal! Pepe and his staff paid attention to people's special dietary needs and when we fell in love with the aji sauce they made sure we always had it available. Fresh breads were made daily, AND the desserts at both lunch and dinner were exquisite.
