I’ve been following Shibata San for a short time due to his unique style of sharpening. I was having a hard time finding a knife from his kuotetsu line. Now that I own one, the experience is exuberant. The knife glides while cutting. Is a unique experience. It has become one of my favorite knives in my collection.
