Recipe: Tart Apple Crisp
Topping:
1/4-1/2 c. Lankanto in lieu of sugar to taste
2 T. arrow root in lieu of white flour
1/2 t. cinnamon
1 1/2 c. BOB's RED MILLS ORGANIC GLUTEN FREE OLD FASHIONED ROLLED OATS
pinch of salt
1/2 c. melted butter
1/4-1/3 c chopped walnuts
Filling:
6-8 med. tart apples (Pink lady apples are both a little sweet and tart.)
1/4-1/2 c. Lankanto in lieu of sugar
1/2 t. cinnamion and 1/2 t. nutmeg
1/4 -1/2 c. unsweetened organic coconut flakes in lieu of raisins and 1/4-1/3 c. chopped walnuts
Directions: Preheat oven to 350.
Make topping in separate bowl. Mix dry ingredients first then add melted butter & mix together. It should have a a crumbly texture.
Filling:
Core apples and slice in 1/8th's pieces. (I leave the skin on apples.) Soak apples in 2 c. water & 2-3 T of lemon juice while you make topping.
Drain apples. Put apples in rectangular pan with spices, flaked unsweetened coconut, and chopped walnuts if desired. Then add crumbly topping on top.
Bake @ 350 for 30-45 min. Cool. Serve hot or cold. Enjoy!”
