I'll update this review if the Scoby performance improves. when it arrived, the scoby was about 4" diameter, & very thin. while I understand it can take longer than seven days for primary ferment, there were no signs of new scoby growth after one week. there has been yeast formation. the brew smells right. unfortunately, even kept between 76-82 degrees, there has been very minimal activity, just some bubbles around the edges of the gallon glass.*update: the first batch did not create a second scoby. attempt number two, about two weeks in... lots of bubbles but growth of a second scoby hasn't happened yet. more than thirty days... no second scoby has grown.*I contacted the seller. They quickly responded and offered assistance. I gave a good rating mostly because of quick shipping & the seller responding.”

You can use regular regular (instead of cane sugar). Filtered water from home didn't cause any problem either.”
