“I've made this dish before, stuffing and bacon-wrapping my own quail. This is almost as good, but not having to do the work makes it great! I found all of the components to be much too salty though. Next time I'll brush them with olive oil before cooking, the skin didn't crisp. Served it with wild rice.
They desperately need a sauce to break the salt and to complete the dish. A nice cherry & balsamic reduction would work well with the cherries in the stuffing.”
