“The quail was delicious. The stuffing was also very tasty, but there was too much of it and created a dish that was mushier than it needed to be. Next time I may cook the quail most of the way, remove some of the stuffing, and continue cooking the quail with the stuffing separate. I agree with the reviewer who recommended running the quail under the broiler for a minute or two, to crisp up the bacon.”

“We have had these several times and like them a lot. The bacon tends to stay a little soggy but it helps keep the quail - which is very lean - from drying out. The birds are tasty and the cherry stuffing is heavenly. In addition to roasting these in the oven as suggested, we have alternatively prepared them on the grill and also stove-top in a pan. Pan roasting works well because it crisps the bacon and you can add a little wine after searing the birds.”
