“Herbes de Provence is my go-to for sauteeing fresh veggies, especially thinly sliced zucchini. I add a sprinkle of dried parsley, oregano, chives, and about two cloves of finely minced garlic! I also brush thieves oil over skewers of baby potatoes, vidalia onion chunks, whole mushrooms and zucchini or eggplant chunks and sprinkle herbs of choice and a little kosher salt and freshly growing pepper before placing skewers on a hit grill and cooking until vegs are soft and a touch charred. The olive oil imparts a terrific flavor and for extra infusions, I drizzle a little more oil and Saratoga's white balsamic just before serving either warm or at room temp.
