“Dassai 45 is our go-to sake with sushi. It’s a lush sake that’s on the sweeter side; balanced but not boring. In the same profile (for taste and value) as Born Gold or Denshin Rin. We have tried the higher polish Dassai products (e.g. Dassai 39 and 23 - haven’t tried “beyond” yet), and while there is a noticeable uptick in quality in those products, the 45 is a perfect companion for your regular sushi dinner. I’d go for the higher polish if you were having some really high quality sushi and wanted a sake that was going to offer less competition to those flavors. Overall, highly recommend to the Junmai Daiginjo fans.”
