Dassai president told us to try it with blue cheese, and gorgonzola cheese - we love that you're pairing it with cheese!

“Great for sipping, chilled, all by its lonesome, and also pairs well with everything I’ve thrown at it: Kara-age Momo, smoked baby back ribs, pork loin chop with miso glaze, chocolate chip cookies. The RPR is 45% but it tasted more like 46% to me. Just sayin’.”
