Thank you so much for your detail review. Wakatake is so unique sake and I agree with you. This saker is kind xof dry sake, but you can feel light and clean. Therefore, it must be pair with some sushi or light seafoods. If you like this sake, I recommend Otokoyama which is also dry sake.
