“I would describe this as light, dry, and somewhat sweet. We drank it cold with grilled mackerel and wagyu. Not a perfect pairing, but still good together. This is a complex sake, with a lot of tasting notes and very aromatic. Many fruit notes, and maybe some ginger even? The dryness suggests minerality. I'd like to try pairing this with cheese next time.”
