This sake is glorious. A friend of mine gave me a Tippsy gift box subscription. In the second one (December 2020) was the Zuiyo Hojun Junmaishu. It is nutty, roasty, with no acidity. It feels like it was brewed with "soft" water -- as if the spirit of the land of Kumamoto had become a teacher, instructing us in the lost art of 'smoothing out our rough edges'. I was so impressed with the Zuiyo Hojun that I ordered a 750ml bottle through Tippsy for a special December Full Moon, "Cold Moon" moon-watching. The sake-kami of Kumamoto delivered. A truly sublime sip.

I thought I just did not like hot sake, but this really is delicious when hot -- and it seems to taste better at 125 degrees than at 85 or 75. It went well with tonkatsu on a cold winter evening. (It's fine over ice, too. But that's less of a revelation.)
