This is the 2nd application of the couverture, and hands down, the best. Used for a smooth and decadent vanilla bean ganache montée and paired with calvados caramel, these macarons are fabulous!

I bought this product to compare with the Valrhona Dulcey 35% Blond. The Valrhona has a buttery caramel flavor. The Callebaut Gold has more of a toffee flavor. They are both extraordinary.
