I was looking for a dark chocolate and usually like a higher percentage of cocoa but Guittard Coucher Du Soleil 72% Dark Couverture is a nice alternative for me.

Guittard is my favorite chocolate, hands down. Their organic couvertures are hard to find and pricey, but this is an equal substitute with beautiful texture and deep, rich flavor. I love using them in brownies, ganache, and especially cookies.

An easy chocolate to work with for making truffle ganache as well as special solid decorated pieces. We chose it because we wanted a rich creamy bittersweet chocolate that could compete in the same truffle collection with 3 other 70-72% chocolates from France, Italy and Belgium. It's the "Made in America" truffle and customers love it.
