“ clean stable flavor profile with excellent nose before and after use. A nice, well priced a/p 72% for coverture, ganache or molding. A bit touchy about high fat content creams for ganache BUT easily brought back to suspension. A good backbone choice for pastry, chocolatier or restaurant work.”
