“These three together could not be matched, in terms of flavor. The Classic reminds me of childhood: that inoccent time before hot sauce. My only complaint is there wasn't more; I could easily use a bottle a week. The merest hint of heat acts as the ringmaster in this circus of flavor. Los Calientes was a perfect "middle-of-the-road" hot sauce: never over-powering but hot nonetheless. As the name implies, the sauce is inspired by mexican cuisine. The Last Dab, made exclusively from the well-named Apollo Pepper, delivers a powerful change in perspective, freeing one from the quotidian cares of mundanity and allowing one brief access to the infinite. If you don't care for that, try using a teaspoon to flavor a quart of something else: the heat and distictive flavor of the Apollo pepper would turn regular ketchup into something special.”
