“I cut this into 2 halves on receipt and did the first half at the weekend. Made a dry rub of salt, pepper, garlic salt, paprika, smoked paprika, fennel seeds, and ground coffee ….. coated the brisket in Dijon mustard and rubbed the coating onto it for overnight marination. 7 hours on a rack over a tray of onions, carrots and beef stock under foil at 120 degrees C and the meat was absolutely beautiful!!!”
