“The pork was very tender and succulent. It is important when cooking the pork to have a sufficient layer of fat to keep the joint moist and it stops it drying out. Also what we do is cook on a trivet with a bit of water under the joint which helps. I personally like the skin on it for a nice crispy crackling. But as a skinless boneless joint, it's great.”
