“Very nice bird. Meaty and delicious. I got three dinners for two out of this one. Roasted as chicken with lemon and tarragon and butter of course.just as tasty cold with salad when it's 31 degrees!”
Guinea fowl are active birds so the leg meat is probably less soft than a barn reared chicken, which does not move much. We are glad the rest of the bird was good though.
“Excellent. Froze well, fits nicely in my Remoska. Tastes much nicer than chicken and makes a succulent change from pheasant. Possibly my favourite poultry.”
