My family bought Roasted & Frozen Hatch Green Chile - Xtra Hot and love this product. So, we bought ten lbs of the product. We live in Tampa now; lived in New Mexico; Albuquerque and Alamogordo for a total of over 35 years, so we miss our Chillies! The only issue we had was the stems in our bags of chillies. So, I would suggest, all the stems be cut off and removed prior to chopping the rest of the chillies. Other than that, no complaint from me or my family and we have already bought more.
