I got introduced to this product when I was able to buy a batch of the fresh-roasted Hatch Chiles but I realized that the quantity was too large to always, because of storage, to get, so I was glad to find the same product in the jars. I like a little heat but I wasn't sure how much so I brought one each of the mild and the medium blend to decide which I like better to use all the time. The mild is tasty but lacks the heat, so if you are timid about heat, I recommend that one. I am going to try for my next delivery to switch the mild to the hot to see how much more heat it has versus the medium. Right now the medium gives me a better enjoyment of the taste of the Hatch chile peppers than the mild.
