I have been a fan of Hatch chiles for years. I lived in Colorado 13 years where chili verde recipes were as contested over as much as much as red chili in Texas where I have lived for 24 years. I look forward to the Hatch chile season each year, but I have never found any Hatch products that compared to fresh Hatch chiles like the ones from The Fresh Chile Company - especially the Hatch Spice Blend, the likes of which I have never found before.
