The knife.My collection is essentially handy VG10’s, blue steel’s and similars, given how handy and easy they are to sharpen . The ZDP-189 is a whole different world. Not everybody thinks that such a hard steel is necessary or even practical. I was fully aware of the fact that it will have to go to a professional sharpener and I might have to be more careful when using it. But I can tell you, it is as sharp as my Gillette fusion 5 razor. It’s light, well balanced, the reverse edge feels more precise that a standard round edge for delicate cuts, and it’s a beauty. Thank you Mr Hamono, and cutting edge knives .
