It’s been… over 25 years… since I lived in Albuquerque, where I would have my green chiles roasted in an industrial-scale version of your Medium Chile roaster at a grocery store every year. When I saw them in your store this year, there was an audible gasp. I immediately ordered one well just to make sure I’d have and be ready before my chiles arrive. It arrive in great shape and this past week I chanced across 5# bags of serranos at a restaurant supply store, so got one to give my new toy an early “test spin”. It was, in a word, MAGNIFICO! I nearly shed real tears of joy. This is SO much better than roasting them on a gas grill, as I have been doing all these years. Each pod is much more evenly roasted and the whole batch is much more uniform than one could possibly do on a grill. And more quickly too. There’s more blistering of the skin from intense flame with less “cooking” the flesh. And there’s nothing quite like the unique aroma of chiles blistering under the correct heat. The sight and smell transported me straight back to The Land of Enchantment like I had never left. My wife was skeptical when I told her I’d bought it, but after seeing it in action and the results with the serranos she can’t wait for our fresh batch of NM chiles to arrive. I might even have to motorize it some day! (But if you come out with a kit for that in the meantime, let me know!!! 😁) I think a short video on your website would turning seeing into understanding and believing for those who’ve never had the opportunity to get the “full New Mexico” chile roasting experience in person.
