I have a particular interest in diary, icecream and chocolates.Look at the ingredients of any chocolate, or many other foods and you will find lecithin, often used as an emulsifier to help water and oil coexist in such as chocolate.This is what I am experimenting with, despite being in a vast amount of commercial food, its not a commonly used ingredient in home use so glad to find a nice big jar.This is non GMO soy derived and reasonable value for a 'small, non commercial' quantity.”
