“Hatch mediun chilies are in a clss by themselves. The heat is there, but in a level most chili lovers palate can comfortably handle. I love to make salsas and verdi with pork; and also green chili stew from these alone. For my own consumption, I love either just hot chili, or medium blended with hot to share with friends who love a hotter chili experience. Hatch green chilis are truly one of the greatest pleasures in my culinary life. Without Hatch green chili, I cook Mexican foods; with Hatch green chili, I am a chef ;).”
