“These are the best! I use twenty-five or thirty mild chilies along with a few medium - heat chilies to make classic Sonoran - style chili colorado. To the basic recipe I add 2 - 3 lbs of lean pork loin cut into 3/8 - in. cubes and browned down before combining. After combining turn the stove down and let it simmer for a couple of hours.”
