“I usually am very happy with your harvest, this year though out of 25 lbs. only 4 orange-red chiles were hot, medium hot and some were as small as a chile serrano. I am hoping for a better selection next year.”

Hi Ruben, We do explain on the product page for Big Jim that the heat level does vary greatly from pod to pod. This is just a trait of Big Jim. Big Jim is one of the most flavorful varieties of chile. I'm not sure if you were roasting the chile and then de-veining it. All of the heat will be in the veins of the chile and chile most be roasted and peeled in order to taste the classic flavor of Hatch Green Chile. Here at the Hatch Chile Store we understand that heat level is very subjective. What's Hot to one person can be Mild to another. I recently reached out to you and offered you a free box of Sandia (Hot) or Lumbre (X-Hot) if you would cover the cost of shipping. You turned us down, but the offer still stands. I'm not entirely sure what else we could have done to improve your experience. As I said earlier, heat level is subjective and we did our best to get you some chile that had the heat level you wanted. Thanks, Taylor

“The chiles are fantastic. We ordered 50 lbs. One box arrived in great shape. The other box had a broken open bottom. My husband called and they said they would send us more if we paid for shipping. We haven't received them yet, but I'm sure we will get them soon. Definitely get your chiles here. This is our third year buying and have been very happy each time. We are in Florida and a three day ship time worried me. Very few bad chiles. Going to order again next year. Made chile rellanos that were fabulous.”

“Incredibly good quality and fresh chiles. This order had no wilting or rotting peppers. When I opened the box an amazing aroma of fresh chiles erupted and spread through my house. The Big Jim is a classic my family enjoys--not too hot and not to bland.”
