“I don't think I received what I ordered. I have been using Callebaut 811 for ages and it has always been dependable. This time the chocolate was too thick at working temperature, there were tiny bubbles in the dipped chocolates and the flavor/mouthfeel was not right.”

Next season I am going to try out Guittard Lever Du Soleil for dipping and molding as it is slightly more fluid.
