“This sauce is impossible; it shouldn't exist. It's too perfect of a sauce, and I guarantee some witchcraft was involved. The near-instant heat of this sauce still can't hide an opening act of peaches, mango and papaya. The pineapple somehow waits and shows up in the back of your palate after the first bite is swallowed, and it mixes with the lime aftertaste to provide some sweetness to your suffering. What's most interesting about this sauce to me is how differently the flavor profile hits if you're using it as a marinade, as opposed to a condiment: when marinated, the meats or pickles take on much more of the ginger and garlic flavor, with the sweet fruits more of an aftertaste -- the sauce does a good job letting ribs' flavor come through uninterrupted (for at least a few moments). The only thing I wouldn't use this sauce for is active cooking -- a lot of the flavors disappear inside a hot pan or simmering sauce, and it ends up tasting like a lot of other ginger lime sauces. Don't accidentally underwhelm yourself -- use your Tears of the Sun right at the beginning for marinating, or on top at the end. Looking forward to everything High River Sauces does from now on!”
