Has a slightly Caribbean flavor. Citrus undertones with good heat balance. One of my favorites.

Very hot on it's own but medium heat when you add it to something. It's a shining star in quesadillas. It's very flavorful and fruity.

It has a great flavor to heat ratio and goes with everything. I expected it to be a bit hotter but the heat is fine. Just add a bit more when you need it.

So I'm on nearly 3 season of subscription hot sauce here. This HAS IT ALL. I literally started just putting this onto plain tortilla chips and it works damn well. Use and abuse this. 9.5/10 Thank you, Heatonist

This sauce has quickly become my “go to” sauce for everything. The flavor is fantastic, and it’s fruity sweetness is just plain delicious and balances nicely with its heat. I like it so much I’ve given it as gifts to friends looking for a new sauce to try.

This sauce is impossible; it shouldn't exist. It's too perfect of a sauce, and I guarantee some witchcraft was involved. The near-instant heat of this sauce still can't hide an opening act of peaches, mango and papaya. The pineapple somehow waits and shows up in the back of your palate after the first bite is swallowed, and it mixes with the lime aftertaste to provide some sweetness to your suffering. What's most interesting about this sauce to me is how differently the flavor profile hits if you're using it as a marinade, as opposed to a condiment: when marinated, the meats or pickles take on much more of the ginger and garlic flavor, with the sweet fruits more of an aftertaste -- the sauce does a good job letting ribs' flavor come through uninterrupted (for at least a few moments). The only thing I wouldn't use this sauce for is active cooking -- a lot of the flavors disappear inside a hot pan or simmering sauce, and it ends up tasting like a lot of other ginger lime sauces. Don't accidentally underwhelm yourself -- use your Tears of the Sun right at the beginning for marinating, or on top at the end. Looking forward to everything High River Sauces does from now on!
