Man, this sauce is good. I don't really get much ghost here, but it might be covered up by the immediate heat of the 7 pot primo. If you're looking for something different for chicken wings, this sauce is a great choice. It's a bit like the Thai Curry sauce at BWW... only cleaner, hotter, and more flavorful. This is my first bottle from Clark & Hopkins, and I'm very impressed.

I've been on a hot sauce kick over the past year, and have bought something like 30 bottles of various sauces. Assam is my new favorite, and the sauce that really vindicates the hobby. It's a really delicious and distinctive curry sauce that packs some heat but combines it with a complex and tasty flavor profile. So far I've mixed in with a mustard curry chicken and also added it to chicken Makhani, and in both cases it's made a tasty dish even better. I now have all of the other Clark & Hopkins sauces on order. The Clark & Hopkins motto - "heat with a purpose" - really says it all.

It’s a good sauce that presents Indian flavors. The consistency isn’t great since it tends to separate easily in hotter foods. I thought it could use a more pungent flavor, maybe some cardamom. A great introduction for people not familiar with native flavors.

First things first: if you like Indian food, you will love this sauce. If you do not like Indian food, chances are this isn't the sauce for you. Personally, I find the 7/10 heat rating a little aggressive. I think it's more of a 5/10. Don't get me wrong, there's some heat, but to me it tastes like medium-spice Indian food. I make a lot of chicken and rice at home and this sauce is PERFECT for it. The smell is good, the taste is good and the heat is nice. A truly wonderful sauce. Definitely love this one with some eggs. Obviously it has a curry taste, and it's delicious. Only reason I give it a 4 rather than a 5 is the water and other ingredients separate a while after opening. Doesn't affect the taste, and I'd rather that than xanthan gum or whatever preservatives to keep it all together, but it doesn't look that appealing.

Clark and Hopkins hot sauces stand out for their yummy flavor. Assam has a taste that will linger with you.. you'll find yourself craving it long after the meal is over. Delicious on rice dishes or used in soups, also taste great over hummus with your favorite chip or on a wrap. So good, you're come back for more!

Assam Pepper Sauce made by Clark + Hopkins is just awesome! Rich and fragrant with tart tamarind and strong curry spices, this sauce represents the flavors of Northeastern India in a bottle. It features both the ghost pepper and the 7-Pot Primo pepper, but the heat is not over the top hot. I had this sauce on fried rice topped with a fried egg and it was amazing! Highly recommended!
