My son-in-law reports that Big Jim chiles are consistent in size and heat. He loves them, and has requested this birthday gift three years in a row. (He grew up in El Paso, and was stationed in Las Cruces before moving to DC.)

Always a favorite - big enough to place on a burger and plenty if you just need to chop one up for a stew. I like the 'hot' for fun, but the perfect heat for me is the 'medium', i.e., it still has a bit of heat, but not enough to overshadow the chile flavor and distract from your meal.

yummy chilis! They come frozen and work perfect for anything you want to make with chilis. I get the Big Jim's whole for eggs, burgers, etc. And I get the Hot ones cut up and seeded for pork green chili. All perfect!

We have tried the medium which was mild but good NM chile flavor and the hot which tasted like Ortega chile. The best we found this year are the big Jim's, good flavor with a bit of a bite.

the last two shipments of my Chile have been not good. I ordered medium to hot and got mild with no taste.

I have to be careful of the chiles' heat so always get half my order in mild as I live in Alaska and many of my local friends that enjoy my cooking are not conditioned to the "New Mexico" heat. They usually love the flavor immediately but take awhile to adjust to the heat.
