“Most of the pods were small, which is time consuming. As a professional chef for over 30 years, I like things that are efficient. Roasting, then peeling a 3-4" pods was tedious. Thankfully, there was a game on TV! There is a touchstone with NM chile (I went through high school and college in NM) that you need to embrace. “1st time order since I’m originally from Albuquerque and go there every year but was unable to this year. 25lbs was delivered mostly undamaged and fresh. There were a some peppers that were unsuitable for roasting therefore the 4 star rating.”
