“Chili was perfect, had bought some medium that was too mild and mixed the hot with it and it works perfect. You can adjust the hotness like that to your liking, really a great method. Product as allways is very good, you can't beat Hatch Chili. I live in Louisiana now but go home to New Mexico every Year to visit in Chama, and to bring back another years supply of Hatch Chili. “Living in California, it's difficult to get GOOD fresh New Mexico chile to roast. (My mother was a native of Albuquerque, and I had a deep green chile emptiness in my life for a very long time). For the past 5 years or so, I've ordered green chile from a variety of vendors who did an adequate job. Last year I came upon The Hatch Chile Store and received the best looking batch of chile's and some really excellent down to earth customer service with really good communication. There are quite a few ways to mail order New Mexico chile these days, but I can't imagine going elsewhere. It's really great to look forward to NOT spend all that time online researching where I can get my chile, and just GO to the folks that do it so well. I was able to order early and not worry about ordering too late when chile has run out. The most difficult part of the process for me now is the wait til harvest!”
